Cook A Delicious Healthy Meal In 15 Minutes Flat

Delicious Bacon & Mushroom Pasta in Pink Sauce.

This is not a fat free meal but it’s a home cooked meal and damn tasty and sure better then eating pizza or burgers for dinner. Best of all you can cook it in 15 minutes flat!

Ingredients

  • 2-4 tabs olive oil
  • 4-6 rashers bacon
  • 1 onion
  • 2 gloves garlic
  • 1 small red chili
  • 300g mushrooms
  • 1 to 1-1/2 cups tomato pasta
  • Handful chopped parsley
  • 1/2 cup thick cream
  • Handful grated Parmesan
  • 500g Penne, Fettuccine, or spiral pasta

Directions

  1. Boil lots of salted water in a large pot
  2. Whilst waiting for water to boil, heat oil in a fry pan and add chopped bacon, onion, chili, garlic. fry for a few minutes till soft
  3. Add mushrooms and fry for another 2 mins
  4. Add tomato pasta and parsley and simmer till pasta is ready
  5. When water has boiled add pasta and cook for approx 10 mins or as per instructions on pack.
  6. Drain pasta when done and add to fry pan mixture
  7. Gently stir through cream and Parmesan
  8. Serve with extra Parmesan if desired.
